Medjool Date Dessert Balls

One of my favorite treats for a plant based eating plan is a recipe using dates to create a delicious, almost-fudge-brownie-like, dessert! I mean, healthy doesn’t have to mean cardboard, right?? Here are the ingredients I use. You will want to load them into a food processor and then blend them up good. Remove the mix from the food processor and shape into 1 inch balls. You’ll be rewarded with a yummy, healthy treat! You can also adjust the ingredients to include raw coconut flakes, chia seeds, or other ingredients you may want to try. Enjoy!

2 cups walnuts or almonds.

2 cups of Medjool dates. Be sure to remove the pits!

2 tablespoon coconut oil.

1/2 teaspon sea salt.

1 teaspoon vanilla extract.
